Review: Basil Hayden x Beehive “Pour Me a Slice” Bourbon-Infused Cheese

Well, the headline tells it all. Beehive Cheese took its aged, cow’s milk cheddar, pumped it up with Basil Hayden’s Bourbon, and is bringing this intriguing combination to you, the drinker. “Pour Me a Slice” comes in both 4 oz. and 12 oz. sizes.

The cheese is fairly firm, quite nutty, and mildly grassy — well balanced and built for snacking as part of any cheese tray. Moderately sharp, the whiskey element is elusive, and while notes of vanilla and a hint of charred wood do manage to emerge on the finish, it is heavily overpowered by the more traditional sharp cheddar notes — powerfully tart and a bit salty.

It’s great as is, but would it be heretical to suggest dropping some cubes of this into a fondue?
