Review: Liber & Co. Toasted Coconut Syrup

Liber & Co.’s latest syrupy concoction is virtually unique in the market: A syrup built around toasted coconuts.

It’s made with a Fair Trade-certified toasted coconut butter from the Philippines, plus cane sugar, lemon oil, salt, and rosemary extract.

That ingredient list doesn’t lie: while a freshly toasted grating of sweetened coconut immediately hits the tongue, it’s chased quickly by a notable lemon character and an herbal element that must be delivered by the rosemary contribution. The sweetness is palpable, and it grows over time, offering a rather significant aftertaste. This of course can be mitigated in delightful fashion with rum, lime juice, pineapple juice, and a host of other tropical ingredients which this syrup practically begs to be used with, but finding the optimal balance can take some tinkering.
