“Tio Pepe En Rama” is a special version of Tio Pepe’s Fino bottling, released once in a year (this is the 9th time), bottled unclarified and unfiltered. For 2018, En Rama is drawn from 62 casks, pulled from its “dense veil of flor” to showcase fino sherry at its finoest sherriest.
If fino sherry is your bag, En Rama is a showcase of the style not to be missed. Brooding and yeasty on the nose, it is pungent with those unmistakable notes of oxidized wine, rising bread dough, and malt vinegar. Sherry of any style is of course an acquired taste (and I’ve yet to fully embrace it), and this expression is no exception: salty, sour, and savory, with a kick of lemon peel on the back end. Complex to the point of confusion, open your mind as you crack open the bottle and witness the true power of yeast.
